baked french toast

12 large croissants

9 eggs

3 3/4 cups coconut milk

1 ½ tsp vanilla

½ tsp cinnamon

½ tsp nutmeg

6 Tbsp butter (3/4 of a stick)

¾ cup of light brown sugar (firmly packed)

Gluten free option: Use gluten free bread

Vegan and dairy free option: replace eggs with egg substitute. Replace butter with butter substitute.

Assembling Butter a 9X12 baking dish and cut croissants in half. Layer into the pan.

Combine eggs, coconut milk, vanilla, cinnamon, nutmeg in a large bowl and mix. Pour the above over the croissants, cover tightly with plastic wrap and place in the refrigerator overnight.

Baking Place the pan of French Toast into a preheated 350 degree oven. Bake until golden brown, roughly 30 minutes

Topping and serving While the french toast is baking, combine brown sugar and butter. Sprinkle brown sugar mixture over the toast and bake another 10 minutes.

Serve immediately. Top with fruit or berries, whip cream and or maple syrup if desired.
